HEALTHY PITA PIZZA RECIPE

Who doesn’t like a good healthy pita pizza recipe? Well, I do and one of my favorite personalities Kris Carr inspired me to make my very own version, thanks to her pita pizza recipe from her amazing book Crazy Sexy Kitchen. I am so in love with her cookbook, but even more in love with this recipe. It is so simple, fresh and healthy. And the best part? It is super quick, even though I made everything from scratch. Total preparation time for me was 45 minutes, and it was simply delicious.  I am not a vegan, but I do incorporate a lot of plant empowered recipes into my house meals, and Kris Carr’s philosophy and recipes has helped me tremendously with our lifestyle. Here is her yummy pita pizza recipe with several tweaks by me:

Items needed to create Kris Carr’s marinara tomato sauce:

  1. 2 tablespoons of extra virgin olive oil
  2. Chopped white onions (4-5 onions)
  3. 5 cloves of garlic, finely minced with cilantro
  4. 5 cups of chopped Roma tomatoes
  5. 1 chilli pepper
  6. Fresh basil leaves
  7. Dried herbs (oregano and thyme)
  8. 1/2 cube of Knorr (or your favorite all purpose spice)
  9. Sea salt to taste

Step 1: To make the pizza, I started by making the marinara tomato sauce from scratch first. Using medium heat, place the olive oil, onions, garlic and pepper in a large pot. Sauté until onions become translucent.

Step 2: Then add the chopped tomatoes and cook on low heat for about 30 minutes. Stir occasionally to prevent sauce sticking to the pot.

Step 3: When sauce becomes thick and is completely cooked, add fresh basil, dried herbs, knorr and salt to taste

Step 4: After 3-5 minutes, remove pot from heat

Items Needed for the pita pizza: Please note this pizza doesn’t include cheese.

  1. 1 tablespoon of extra virgin olive oil
  2. 4 whole-grain pitas
  3. 1 cup of Kris Carr’s marinara tomato sauce
  4. 2 cups of shredded chicken
  5. 1 bag of mixed shredded green cabbage and carrots
  6. 1/2 teaspoon of minced garlic with cilantro
  7. Dried herbs (oregano and thyme)

Step 5: Preheat oven to 375F

Step 6: Place the pitas on a lightly oiled baking tray.

Step 7: Lightly drizzle olive oil on the pita. Spread an even layer of marinara sauce on the pita, followed by shredded chicken, green cabbage and carrots.

Step 8: Sprinkle minced garlic and cilantro on the pitas, topped with oregano and thyme.

Step 9: Bake for 8-10 minutes.

Step 10: Cool, slice and serve
